Ground Hog!

HI Y'all
I was just wondering if anyone knows how authentic it would be to take a groundhog on a reenactment to eat? and if so how would it be prepared?

If they used it, they'd have had it. Don't get me wrong, I'm not above cullinary adventures in the name of authenticity. I sampled Woodburn's famous "rat of Vicksburg" in 2007. However, it appears you're looking for a reason to eat a groundhog at an event, which seems silly.
