Depending on the freshness of the collodion and its chemical composition, and with the bright light of noon, you can have exposure times of about 1 second. Thus, there are action photographs taken during the Civil War. There is the one slightly out of focus stereo of a gunship firing in taken from the parapet of Fort Sumter in Bob Zeller's The Civil War In-Depth. However, there is another image in the LOC (Morris Island, South Carolina. Unidentified camp - LC-DIG-cwpb-04748) which shows a gunship firing, taken from the beach at Morris Island. If quick exposure times weren't possible, you wouldn't be able to see the plume of the smoke, recently fired, from the side of the gunship.
As to the GAR stuff, another option for those long in the beard/tooth/fang could be an 1890s National Guard encampment. There are a few images hidden away in the Brady-Handy collection on the LOC website. And, boy howdy. It's just like reenacting. Check a few snippets out from the 1893 encampment of the 3rd Battalion D.C.N.G., U.V.C., Company A. And, those horrible Indian wars sacks and kepis we're always groaning about in misguided e-bay photo labels or in certain Three Stooges episodes would be a core and 'core part of your kit, as well as your old Corps badge (not to mention some pretty cool shoes)!
