Most any civilian shirt pattern is a good place to start. I think Ben Tart sells an overshirt pattern, I've never used it so I can't comment on what's it's like. I've used the Hollyday pattern from County Cloth in the past. It's an easy pattern to work with and the directions for assembly are easy to follow. I've used wool flannel, denim, jean wool, cotton jean, etc. for material. I've found that all of them work well. Was there any specific overshirt you're trying to pattern?
