I have a beaver pelt, and I'm wanting it turned into a civilian hat. Does anyone know someone who can make a spot-on reproduction 19th c. civilian fur hat?

Depends on design, but at least two will be needed, just to do one of those tied up ear flap things.
For that type of fabric/fur combo work, you'll find Adler's quite competent, providing you provide the exacting pattern you want.
