  • Beer (homebrewing period recipies)

    I recently made a porter from a recipie adapted from an order made for George washington, It called for molasses... I bottled it last week.
    I am looking for other homebrewing period style recipies to make.

    If others are interested I will post the recipie I used. It tasted good when bottling. :)

    EDIT:
    Heres the recipie:

    MR. HARE'S PORTER

    INGREDIENTS

    3 1/3 lbs amber malt extract
    3 1/3 lbs dark malt extract
    1 1/2 cups molasses
    3/4 lb crystal malt
    1/2 lb black patent malt
    1/4 lb chocolate malt
    1 1/2 ounces Northern Brewer hops [bittering]
    1 1/2 ounces Cascade hops [aroma]
    1 package American Ale yeast
    3/4 cup corn sugar [primer]


    PROCEDURE

    Place crushed crystal malt, black patent malt, and chocolate malt in water and steep at 155 degrees for 30 minutes. Remove spent grains, add malt extracts, molasses, Northern hops and boil for 1 hour. Remove from heat, add Cascade hops and let steep for 10 minutes. Cool wort and pitch yeast. Ferment for 10-14 days. Bottle using corn sugar. Age in bottle 10-14 days.

      That link looks cool, to bad no recipies though.
      I'll post the recipie when I have access to it...
      Hopefuly it comes out as good as I expect.

            I'm at work right now but can provide a few a little later tonight.
            Before I post them how much experience do you guys have with brewing?
            -I don't want to insult anyone's intelligence by starting from the ground up.
            Also I'm wanting to make a batch for an event in June does anyone know where I might be able to get a Wooden beer barrel? I know there is a maker of barrels out there for reenactors however I don't want the bees wax and need something with thicker wood.

              You can try the cooper at www.5rivers.org He makes repros for Fort Delaware. Uses Oak.

              Looking forward to the receipies, the darker the better! (Porter, Yes!)

                        Been homebrewing since 1997. Most of the common beer styles where in existence in 1860. Recipies haven't changed much(I gave up on recipies a couple of years ago and now just wing it/develope my own), about the only ingredient not in period is some of the later hybrid hop varieties. The basics like Halletuer, Fuggles, etc. were in existence. Porters, brown ales, and even lager- their all good:-)

                        Try these people for a keg http://www.gibbsbrothers.com/
                        They are a commercial supplier to industry as well as hobbies. Excellent customer service. I orderd a 5 gal parriffin lined keg on Wednesday morning and had it in my hands (shipped ups ground) by Thursday Afternoon. With spigot and shipping it cost less than a keg alone from Panther.

                          Instead of bottling at the last stage you keg it up?
                          Are they difficult to seal/serve from?

                            Thank you for your inquiry about our kegs.

                            We manufacture top quality wine kegs. We also produce a paraffin lined keg and a keg that is for displays & props but not suitable for holding liquids.

                            All kegs have a bung hole for putting liquid in.

                            However, we do not manufacture kegs for beer. As stated above, we only produce wine barrels.

                              I bet one of those kegs would make a porter or stout taste great. Which style would you recomend?
