    All,

    Not sure how many of y'all have purchased slab bacon from Scott Hams (KY) over the years but I learned from a friend today they were closing and called to confirm. Ms. June confirmed that they are indeed shutting down and indicated it was a hard decision for them.

    When I called (noon, 8/26/15) they had three slabs left. Once those are gone, that's it. Note they often will sell a half slab if you don't want to invest in the full 7-8lb piece.

    Fine folks who took pride in making quality product. They did it the right way. And veterans of Banks' Grand Retreat and Into the Piney Woods will remember well the daily slab ration issue. I ordered a quarter ton of pig for each event.

    Tip of the hat to Scott Hams. Grab you some swine while they still have a bit.

      Those people were an absolute pleasure to deal with. Now starts the hard search for something of similar quality!

          That is bad news indeed. Purchased a many slabs, as well as hams. Fast service and good product. It is a shame that they are closing.

            For many of you that relied on this supplier for slab bacon I would suggest asking your local meat market(s). Every meat market that sells bacon can get slab bacon. Most of the time their bacon comes in slab and they cut it. I've tried a few local markets and have my favorites but every single one has been able to get it in a day or two if they didn't have it in stock and the price was comparable to Hams.

              Patrick and all,

              Yes- local butchers can procure the cut of meat we often use but Scott Hams was superior because of how they treated/cured their product (smoke and salt). Because of their preservation techniques, their slab would last days (weeks in fact) without refrigeration. The vast majority of product you can get from local butchers will begin to spoil almost immediately. Important distinction.

                I don't have any spoilage problems from the slab bacon I use from a local meat market, kept in my haversack all weekend. If the event feeds us and I have left overs, it lasts well until it's eaten during the following week.
                There are still a sufficient amount of butchers and sellers of real meats and if you look hard enough, you'll find Scott Hams closing isn't the end of your meat rations.

                    I understand that. I also ask them to order salted and smoked slabs. They have the same longevity out of refrigeration.

                      I met Leslie Scott at the Nashville Flea Market back in the 1990's. When I asked him for "sowbelly", he looked at me like I had three heads. I explained reenacting and authentic food and he got it. He had been throwing away the sowbelly for years. I made arrangements to buy a couple of slabs from him for an event. He delivered exactly what I wanted and on the day he said it would arrive. After the event, people asked for my source and I shared it, telling them to mention they needed the slab for reenacting so the Scott's would know what they wanted.

                      I was sorry when Mr. Scott stopped attending the Nashville Flea Market, as he was a regular stop for bacon and sausage and friendly conversation. He once mentioned that he was surprised how much reenacting business he was getting and I told him how popular his bacon was. Now I'm sorry to hear they are shutting down. I would have thought his kids would have taken over the business, but I guess not.

                        In the midwest, this has been a favorite source for a while:
                        German sausage, fresh meats, Klemm's, Indianapolis, fresh bratwurst, custom smoking, wild game processing


                        Claus was attending events with my old Indiana pards and I for a year or two (back before he took over and it was called "Klemm's").

                            I regret to hear that they are closing shop.

                              Yeah I would advise against this, but you pays your money you takes your choice.

                              Our unit got the word about Scotts, and I spoke with June last week to get one last order in. Again, an absolute angel of a lady to deal with. She claims they wanted to retire and sell the store five years ago, but stayed on. Now in their seventies, with mister suffering from arthritis, she says it's finally time. As we spoke about the re-enacting community, and how much they will be missed, I could sense the emotion in her voice. In all her graciousness she counted off a list of Scott's competitors she hoped would be able to take care of us.
