We too plant heirloom varieties almost exclusively but like the other person said, not all are 1860's appropriate. We have about 15 varieties of beans (Jacob's Cattle, Appaloosa, Bible Ruth, Soldier, Mayflower, Turkey Craw, Dapple Gray, and Marrow among others) we plant our corn in hills and some of the beans use the stalks to trellis themselves. Everything is done by hand, we don't have any mechanization but we do have many hands to help. :) We also plant by the astrological signs.
The garden is about an acre and a half. The beans we sell, everything else is for us.
