    We too plant heirloom varieties almost exclusively but like the other person said, not all are 1860's appropriate. We have about 15 varieties of beans (Jacob's Cattle, Appaloosa, Bible Ruth, Soldier, Mayflower, Turkey Craw, Dapple Gray, and Marrow among others) we plant our corn in hills and some of the beans use the stalks to trellis themselves. Everything is done by hand, we don't have any mechanization but we do have many hands to help. :) We also plant by the astrological signs.

    The garden is about an acre and a half. The beans we sell, everything else is for us.

      Lower sugar content in yer mash will mean lower alcohol content. Lower yield per gallon. Sorry to disappoint you......................

        Well, I just put some heirloom tomatoes into a planter. I found them in Columbia, CA, there is a very fine store that specializes in period heirloom vegetables and fruits. The place is called The Farmers Friend. http://www.yelp.com/biz/the-farmers-friend-columbia
        Ask for Maria, and tell her that Judith sent you, you won't be disappointed. I not only bought plants, but fine planters as well, and that tomato plant I bought came already with 7 tomatoes on it, and was $1.50, far below cost what garden centers and nurseries sell today! Trust me, Maria not only knows what American heirlooms will grow in your area, but they also have Europeon heirloom varieties as well! It's a fantastic place, I cannot recommend it high enough.

          Which of course for religious purposes will be right fine. Though I fear as I sit today I am staring down a 70% loss of my first planting. My plot is too sandy and insect infested to pull it off in a period correct manner I think.

          I'll give you a heap of period silage to turn into period correct horse manure to then get on your period correct boots. Now that is accurate. I put up some silage pics in my profile
